Red Rice is a long skinny grain that is deep red in colour. The distinctive colour is produced during the milling process when the outer husk of the rice is removed but the outer skin of the rice grain is retained.
Red rice is filled with antioxidants and magnesium, it possesses qualities that help diabetics control insulin, it is a great source of fibre and also assists the body with several digestive functions.
To cook the perfect Red Rice you should use 1 cup of rice to 2 cups of water.
Bring the two to the boil stirring occasionally.
Leave to simmer until rice is cooked; this will usually take around 45 minutes. Leave to stand for 5 to 10 minutes covered, fluff and then serve.
