Rolled Barley has a sweet nutty flavour and is traditionally dehulled barley grains that have been steamed and rolled into flat flakes. It is rich in vitamins and nutrient and contains beta-glucan which slows digestion and promotes fullness which can assist in weight management.
Use in breakfast cereals like muesli and porridge or as a substitute for oats when baking cookies, cakes and breads.
Warm Barley & Blueberry Porridge recipe & cooking instructions
Ingredients
1.5 cups rolled barley flakes
Half a cup dried blueberries
Half a cup chopped pecans or walnuts
2 tablespoons packed rapadura sugar
Half teaspoon cinnamon
*Combine all ingredients in a large ziplock bag; shake to mix. (Bag can be stored for a month in a cool dry place)
*To prepare a single portion, place 1/3 cup cereal mixture in a medium microwavable bowl. Add 1/2 cup water and microwave, uncovered, for 3 minutes.
Let stand for 2 minutes before serving.
