Rice vermicelli is a thin form of rice noodles sometimes referred to as 'rice noodles' or 'rice sticks’. Commonly used in Chinese, Thai, Vietnamese, and other Southeast Asian cuisines, where they are often seen in stir-fries, soups, spring rolls, and salads.
Rice noodles are more delicate and more fragile compared to other noodles made from wheat. So, it is easier to over cook them. Make sure that the rice noodles are completely submerged when cooking them!
Hot tip: If you plan to use the rice noodles for your Pad Thai, then make sure to under-cook them a bit. You may want to take the noodles out of hot water after about 4 minutes. The under-cooked noodles will absorb more moisture and cook further once added to your Pad Thai stir fry.
We love using them in rice pare rolls and homemade noodle bowls!
