Mirin is made from fermented rice and has a mild, slightly sour flavour which is more subtle than regular white vinegar. It is an amber-coloured and adds amazing flavour to Japanese cooking.
During cooking, the alcohol in mirin is cooked out of the liquid and a distinct umami flavour develops. Because of its high sugar content, it's the perfect balance to the salty flavour of soy sauce, another classic Japanese condiment.
We love using it to make a teriyaki sauce glaze!
