Vanilla Beans have a sweet, perfumed aroma with a woody or smoky flavour. Slice open the vanilla pod lengthwise and inside you’ll find thousands of tiny, fragrant seeds. For any recipe that calls for vanilla extract, you can replace it with fresh vanilla pod seeds. What ever you do, never throw away the outer shell! After you’ve scraped the seeds out, there’s still great use for the pods!
Although it is typically found and used in dessert type foods, many are unaware that it’s actually just as tasty in savoury! You can add it to (but not limited to)stews, sauces, smoothies and mashed potatoes. Ideas for dessert use include homemade vanilla ice cream, infused maple syrup and vanilla bean whipped cream.
