There are three varieties of peppercorns: black, green, and white. Green peppercorns are simply the same as black peppercorns, only picked early and unripe. They're aromatic, with a fresher, fruitier flavour than white or black pepper, but not nearly as sharp and astringent as black. As a result, white peppercorns and have more of a vegetal and fresh flavour.
Because green peppercorns aren’t as strong as its brothers and sisters, they go very well in delicately flavoured foods such as chicken and fish. They’re also great in creamy sauces and curries!
