One of the most widely used spice blends in Northern Indian Cooking, garam masala literally translates to hot spice that has about 5-6 types of spices. Garam masala adds warmth, sweetness, floral notes, and a touch of heat from the black pepper to any dish. It is intended to be a fragrant spice as well as flavourful.
A traditional Garam Masala will contain fennel seeds, cinnamon, caraway seeds, black peppercorns, cloves and cardamon.
Garam masala is used with many meat and fish dishes. You will also find it in vegetarian and vegan dishes and soups based on legumes and vegetables. It’s delicious when used as a rub for barbecued fish, along with as much ground dried chilli as you like and salt to taste.
Garam masala is usually added near the end of cooking so that it not only seasons the dish but adds to the aroma. It is enormously versatile as a spicing agent across a wide cross-section of Indian dishes.
