Allspice is a spice made from the dried berries of a plant known as Pimenta dioica, which is a member of the myrtle family and is known to be one of the most important ingredients in Caribbean cuisine. It comes in both a powdered and whole form. The flavour of allspice brings to mind cinnamon, cloves, nutmeg, and pepper. Allspice can be added to sweet or savoury food, or even brewed as a tea.
Allspice is used in Caribbean, Middle Eastern, and Latin American cuisines, among others. Allspice ground can be found in desserts, such as pumpkin cake or pie, spice cakes, and gingerbread. In European countries such as Germany, it is used in large amounts by commercial sausage makers as well as a main flavour used in barbecue sauces.
