Saffron is one of the most precious spices in the world. It has a subtly earthy & grassy flavour & aroma, yet sweet, similar to floral & honey.
The most classic use for saffron is in rice dishes: risottos, pilafs, and paellas but it is also known to be especially good when used in seafood dishes such as bouillabaisse and paella. Desserts are another go-to, as saffron can tread anywhere vanilla does, such as custards and cookies.
To make a wonderful marinade for fish, add saffron threads, garlic, and thyme to vinegar. Yum yum! Or even for something a little simpler - leave a few strands of saffron threads in a glass of warm milk with a pinch of sugar and then taste it.
