Also known as speckled or French lentils. In contrast to other varieties of lentils Puy lentils will hold their form better and have a rich taste. As well as being used in a traditional manner they are also a fantastic addition to salads because of their aforementioned texture.
Originally grown in volcanic soil of France, Puy lentils can now be sourced in Australia, Northern America and even Italy.
