Our carob is completely chocolate free and gluten free.
To ensure our discerning friends can enjoy the real taste of carob and not have any chemicals found in cocoa beans we make our carob with specially prepared, trans-fat free, third-party certified, segregated, sustainable, palm kernel oil. We do not use cocoa butter with our carob as this will mask the real carob flavour.
Carob has naturally occuring lower fat but higher sugar content compared with cocoa (cacao) beans. Roasting carob is therefore very important. It develops the carob flavour and also lowers the sugar content. The carob powder we use as the starting material in our manufacturing contains 35% sugar whereas the lighter carob on the market has 50% sugar content and is milder in flavour which is then masked by the chocolate notes from the cocoa butter.
