Pappardelle with Wild Mushroom Cream Sauce: Sauté a mix of wild mushrooms such as porcini, shiitake, and oyster mushrooms with garlic, shallots, and thyme until golden brown and fragrant. Deglaze the pan with a splash of white wine and stir in some heavy cream. Toss cooked pappardelle in the creamy mushroom sauce and finish with a sprinkle of freshly grated Parmesan cheese and chopped parsley.
Pappardelle with Slow-cooked Ragu: Simmer a rich and hearty meat sauce made with ground beef, pork, or a combination of both, along with onions, carrots, celery, crushed tomatoes, and a splash of red wine. Let it cook low and slow until the flavours meld together and the meat becomes tender. Serve the ragu over cooked pappardelle and garnish with grated Pecorino Romano cheese and a sprig of fresh basil.
