Date and Nut Energy Balls:
Ingredients:
1 cup dried dates, pitted
1 cup nuts of your choice (such as almonds, cashews, or walnuts)
2 tablespoons nut butter (such as almond butter or peanut butter)
1/4 teaspoon ground cinnamon (optional)
1/4 cup shredded coconut or cocoa powder for rolling (optional)
Instructions:
Place the dried dates in a bowl and cover them with warm water. Let them soak for about 10-15 minutes to soften.
Drain the dates and pat them dry with a paper towel.
In a food processor, combine the softened dates, nuts, nut butter, and ground cinnamon (if using). Pulse until the mixture comes together and forms a sticky dough.
Scoop out tablespoon-sized portions of the dough and roll them into balls between your hands.
If desired, roll the energy balls in shredded coconut or cocoa powder for added flavour and texture.
Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
Once chilled, the energy balls are ready to enjoy! Store any leftovers in an airtight container in the refrigerator for up to one week.
