Palm sugar is produced from the sap of palm trees that is boiled down to a thick mass, then left to cool and harden. The result is an unrefined sugar with hints of caramel flavour that is usually less sweet than cane sugar - some say Palm sugar has a flavour reminiscent of caramel and may have smoky overtones or hints of maple… yum yum.

Palm sugar contains less glucose and a lower glycemic index than table sugar or honey. This helps to stabilise blood sugar levels better than other sweeteners so your energy levels don't spike and crash — and reduces strain on your heart.

This sugar is used in curries, desserts, and sauces, especially in the iconic dish pad thai.
