The most popular way of preparing fava beans in Egypt is by taking the mashed, cooked beans and adding oil, salt and cumin to them, making the well known dish foul medames. It is traditionally eaten with bread (generally at breakfast) and is considered the Egyptian national dish. Foul medammes is also commonly eaten for breakfast in the Middle East as it’s taste has travelled from Egypt over time.
You could try incorporating foul medammes into salads, side dishes and mix with herbs and spices for stuffing vegetables.
FYI: To serve, warm gently, add lemon juice, salt, garlic and oil to taste.
