Named for their red colour and their shape, kidney beans are a type of legume that commonly comes in two varieties: light red and dark red. The red, organ-shaped beans have a soft, buttery interior texture that taste great in a variety of soups, pastas, chilis, and salads.
Red kidney beans are often associated (but not limited to) with chilli con carne or Mexican cuisine. They can be used in a variety of recipes and are a great source of vitamins and minerals, such as molybdenum, folate, iron, copper, manganese, potassium… so you know you’re doing the right thing when you eat these guys!
Here are some things you can do with them: vegetarian taco soup, past bean and sausage soup, three bean grape salad, kidney bean and vegetable soup, pasta and kidney bean salad or a kidney bean burger!
