The subtle taste of mastic is hard to pinpoint exactly. Some describe it as a combination of fennel, anise and mint while others day is has the equivalent taste of the smell of a pine forrest.
Whilst mastic can overpower other ingredients, used carefully it adds a beautifully subtle balance of flavour in both sweet and savoury dishes. It has an amazing aroma and it can really complement a dish. Pairing it with salt and sugar gives you a more controlled flavour.
If you grind the mastic crystal with a mortar and pestle, you end up with fine cream-coloured mastic powder. Mastic powder can be used to flavour custards, cookies, and cupcakes - after eating one, your mouth will feel tingly clean!
